Which platform and how to work with affiliates?

I'm working on a side project (Saas) and I'm thinking about adding an affiliate program to have people earning something (recurring 15-20%) when they refer new customers.
I see that there are many different services that can do that, what do you use?
I'm personally looking for something that allows to not set any cookie and do all the conversion and tracking on the backend to avoid having to add a cookie banner just for that reason. It seems that most of them just support client side tracking and no strong server side functionalities 😞
Also, how do you deal with affiliates? Do they send you a monthly invoice when they need to be paid? I'd start invoicing for that service as a freelancer and then open a company when there are some numbers and I'm worried that it wouldn't appear very professional having to ask affiliates to invoice an individual instead of a company. What do you think? 🤷♂️

I checked some platforms looking for one that wouldn't charge me when there is no sale in a given month. And I found only one without any fixed costs: Reditus.
We integrated with them and soon I should be able to form an opinion.
I don't think there is any platform that doesn't use cookies. How would they recognize a recommended user that doesn't sign up immediately after being redirected?
Also, most analytic tools use cookies. And some servers send cookies on their own. It's really hard to avoid this...
Regarding payments - every affiliate program has a threshold (usually around $100) and when an affiliate reaches it, they can request a payout.
Although I know one program that pays every month, even when you accumulated only $1. But it's an exception.
Being an individual is not a problem, unless you live in European Union and your affiliate is a EU-based company. It that case they should charge you VAT, additionally.
